Why Hallnara Chose Kagoshima and Okayama Over Every Other Matcha Region in Japan

If you know even a little about Japanese tea, you've probably heard of Uji. It's the most famous matcha-growing region in Japan, the one most tea brands lead with, the one people picture when they imagine Kyoto tea houses and centuries-old ceremony. So when people find out Hallnara sources exclusively from Kagoshima and Okayama instead, the question comes up a lot: why not Uji?

It's a fair question, and the honest answer isn't that Uji is bad. It's genuinely excellent. The answer is that we weren't trying to sell the region everyone already knows we were trying to build a matcha line around two very specific, very different flavour experiences, and Kagoshima and Okayama simply gave us that in a way nothing else did.

Here's the actual reasoning behind it.

Japan grows very different matcha depending on where you look

This is the part that surprises people who assume all Japanese matcha tastes roughly the same. It really doesn't. Region shapes flavour in matcha the same way it shapes flavour in wine or coffee soil composition, altitude, climate, and rainfall all leave a fingerprint on the final cup.

Uji, near Kyoto, has the reputation and the history. Centuries of refined cultivation, cooler weather, and some of the most prestigious tea gardens in the country. It produces elegant, nuanced matcha and commands a price to match its reputation.

Nishio, in Aichi prefecture, is Japan's largest matcha-producing region by volume, known for a balanced, slightly grassy profile that's often used as a reliable everyday standard.

Okayama, at the southern tip of Japan, is shaped by volcanic soil and a warmer climate producing bold, structured, full-bodied matcha unlike anywhere else in the country.

Kagoshima, further inland with a cooler mountain climate, produces something gentler and smoother a matcha built for calm rather than intensity.

None of these are objectively "the best." They're different instruments. And once we understood that, the decision stopped being about chasing the most famous name and started being about which two regions actually gave us the range we wanted to offer.

Why Kagoshima

Kagoshima sits on the island of Kyushu, at the southern edge of Japan, in the shadow of active volcanoes including Sakurajima. That volcanic geology means the soil here is unusually mineral-rich and tea plants, like most crops, absorb the character of the ground they grow in.

The result is a matcha with real structure. Rich umami, confident astringency, a deep colour, and an aroma that genuinely rises up to meet you the moment you sift it into a bowl. It's not subtle, and it isn't trying to be. This is the matcha we named Vitality 活力 (Katsuryoku) built for mornings, for focus, for the moments that demand clarity rather than quiet.

Kagoshima's warmer climate also means an earlier first harvest than most other regions, which matters more than people realise. First-flush leaves, the very first picking of the season carry the highest concentration of L-theanine and the lowest bitterness. Kagoshima's climate lets that first harvest happen sooner and with real consistency, year after year.

We chose Kagoshima because we wanted a matcha that could hold its own pure, in a latte, any way you took it without losing its identity. That's a harder thing to find than it sounds.

Why Okayama

Okayama is inland, in central Japan, with a cooler mountain climate that grows tea very differently from Kagoshima's volcanic south. Where Kagoshima gives you intensity, Okayama gives you restraint and that restraint is exactly what we were looking for.

The matcha grown here is smooth, gently sweet, and low in both bitterness and astringency. It's the kind of matcha that doesn't ask anything of you. No adjustment period, no getting used to the flavour. Just a soft, mellow, umami-forward cup that's genuinely calming to drink. This became our Peaceful Heart 心静 (Shin-sei) matcha for stillness, for a pause, for returning to yourself for three quiet minutes before the day picks up speed.

Choosing Okayama meant we had a matcha that could genuinely be someone's first approachable enough to convert a skeptic, and good enough that it never feels like a beginner's compromise.


Two regions, one honest reason

Here's the actual logic, stripped down: we didn't want to offer five or six different matchas that all tasted vaguely similar with different price tags attached. We wanted two matchas that were genuinely, meaningfully different from each other so that choosing between them was a real decision based on what you actually wanted that morning, not just marketing.

Kagoshima gave us bold. Okayama gave us gentle. Between the two of them, we cover the full range most people are actually looking for, without diluting either one by trying to be everything at once.

This is also why we've stayed single-origin rather than blending. A blend can smooth out inconsistency, but it also erases the very thing that makes a region's matcha distinctive in the first place. Why doesn't Hallnara source matcha from Uji, Japan's most famous matcha region?
