8 Matcha Recipes Using Your Hallnara Matcha Ritual Base (Sakura Powder, Yuzee Puree, Blueberry & More)

If you have been making the same bowl of matcha every single morning sift, whisk, milk, done,  this is your sign to switch things up. The base of your matcha ritual never has to change. What you build on top of it can change completely.

Once you have your matcha properly whisked, that base is genuinely one of the most versatile things you can work with in your kitchen. It plays well with coconut water. It plays well with honey and lemon. It plays well with orange juice, sparkling water, and pretty much anything bright and citrusy. And once you know a handful of simple combinations, your daily matcha stops being a routine and starts being something you actually look forward to.

Here are five ways to take your ceremonial grade matcha beyond the standard latte, all built on the same simple ritual base you are probably already making.

The ritual base | The one step every recipe starts with

Before any of the five recipes below, you need the same starting point: a properly whisked matcha base. This takes about two minutes and it is the foundation for everything that follows.

Sift 2g of matcha into your bowl to break up any clumps. Add 60ml of water heated to 70–80°C never boiling, as it will scorch the matcha and make it bitter. Whisk briskly in a "W" motion for 20 to 30 seconds until the surface is smooth and frothy.

That's it. That is your ritual base. Everything below builds on top of it.

If you don't have a proper matcha whisk yet, this is genuinely the one tool worth owning a fork or spoon will not create the same froth, and froth matters more than people expect for how each of these recipes turns out. 1. Coconut Water Matcha

This is the one to make when it's hot outside and a hot bowl of matcha is the last thing you want which, in the UAE, is most of the year.

Prepare your ritual base as above. Instead of adding milk, pour it over 150ml of chilled coconut water and add a handful of ice. Stir gently rather than whisking again you want the coconut water's natural sweetness to stay light, not get overwhelmed.

Coconut water matcha works particularly well with a smoother matcha origin, since coconut water already brings its own subtle sweetness. The Kagoshima Ceremonial Matcha gentler and more approachable pairs beautifully here without competing with the coconut flavour.

This is also one of the easiest ways to introduce someone to matcha for the first time. It tastes refreshing rather than intense, and there is genuinely nothing else quite like it.

2. Honey Lemon Sparkling Matcha

If you want something that feels closer to a proper afternoon drink than a morning ritual, this is it.

Make your ritual base and let it cool slightly. In a separate glass, 15 g of honey (3 tablespoons)  and then 100 ml of sparkling water (100 ml) and pour matcha on top.

The result is bright, slightly tart, and naturally sweet closer to a matcha lemonade than a traditional tea. It's an excellent option if you find plain matcha a little too earthy on its own; the honey and lemon round out the flavour without masking it.

3. Classic Iced Matcha Latte

Sometimes the simplest version is the best one, and this is the recipe most people end up making on repeat once they have their ritual down.

Prepare your ritual base as usual. Fill a glass with ice, pour in your milk of choice 150ml fresh milk works especially well with matcha's flavour and pour the whisked matcha over the top. Watch it settle into that classic layered look before you stir it together.

No sweetener needed if you're using a smooth, low-bitterness matcha, though a touch of honey, hallnara coconut nectar, or maple syrup 5-15ml per 150ml of milk of choice works nicely if you prefer it sweeter. This is the version to make when you want something reliable, quick, and exactly what you expect a good matcha latte to taste like.

4. Matcha and Orange Juice

This sounds unusual until you try it, and then it becomes one of those combinations you can't believe you hadn't thought of sooner.

Make your ritual base and let it cool to room temperature. Fill a glass with ice and 150ml of fresh orange juice, then slowly pour your matcha over the back of a spoon so it layers on top rather than mixing immediately. Stir just before drinking.

The bright citrus of the orange juice against the grassy depth of matcha is genuinely one of the more interesting flavour pairings you can make at home slightly bitter, slightly sweet, completely refreshing. It also happens to look excellent, with that layered green-and-orange effect, if you're the type who photographs your drinks before finishing them.

5. Matcha with Warm Honey Milk

For the evenings when you want the ritual of matcha without needing the full energy boost, this softer version is worth keeping in your back pocket.

Warm 150ml of milk gently on the stove or in the microwave just until warm, not boiling. Stir in a teaspoon of honey until dissolved. Prepare your ritual base as usual, then pour the warm honey milk over it and stir together.

This version is noticeably gentler and more comforting than an iced latte, closer to a warm, cosy drink than a wake-up call. It works particularly well with a smoother matcha since the honey and warm milk already bring plenty of sweetness on their own.

6. Yuzu Honey Lemon Sparkling Matcha

This is the one that turns your matcha ritual into something closer to a proper afternoon drink.

What you need:

  • 25ml Hallnara Yuzu Puree

  • 5–10g honey (optional, if you like it sweeter)

  • 5ml fresh lemon juice

  • 100ml sparkling water

  • Your matcha ritual base

In a glass, stir together the yuzu puree, honey, and lemon juice until the honey dissolves. Add ice, then top with sparkling water. Pour your whisked matcha over the top and give it one gentle stir just before drinking.

The yuzu brings a bright, floral citrus note that regular lemon simply can't replicate, it's sharper and more fragrant, and it plays beautifully against the sparkling water. This one holds up well with either origin, but if you want the matcha to stay clearly present under the citrus, Okayama Ceremonial Matcha bold and full-bodied is the one to reach for.

7. Sakura Matcha Latte

This is a genuinely special one, and it looks as good as it tastes, a soft, naturally pink base with your matcha poured on top.

What you need:

  • 10g Hallnara Sakura Powder

  • 10–15g honey

  • 10ml warm water

  • 140ml milk

  • Your matcha ritual base

In a small jug, combine the sakura powder, honey, and warm water. Use an electric frother to mix until completely smooth and fully dissolved, no clumps, no gritty texture. Froth or warm your milk, then pour the sakura mixture into your glass followed by the milk. Finally, pour your matcha base on top.

For a softer, more delicate cup, use Kagoshima, its gentle character lets the sakura's floral sweetness lead. For something with more structure underneath the floral notes, use Okayama.

8. Blueberry Matcha Latte

This one takes a few extra minutes because you're making a quick homemade blueberry jam first, but it's worth it, by using blueberry powder or natural blueberries, the result tastes nothing like the artificial blueberry syrups you'll find elsewhere.

For the blueberry jam:

  • 15–20g fresh blueberries, pressed well

  • 30ml water

  • 10–15g Hallnara Blueberry Powder

  • 10–20g honey

  • 2g gelatin

Combine everything in a small pot and bring to a boil, around 100°C, cooking for 2–3 minutes. Remove from heat and let it cool completely before using.

To assemble:
 Spoon 30–50g of the cooled blueberry jam into the bottom of your glass. Add 150g milk (adjust with an extra 10–15g of honey if you like it sweeter). Pour your whisked matcha base on top.

A note on which matcha to use

Both Hallnara origins work across all five recipes, but if you're building your own ritual and want to lean into a specific direction, here's the simple rule: Kagoshima is smoother and more forgiving, so it shines in recipes where you want the matcha to blend gently into other flavours like the coconut water and warm honey milk versions. Okayama is bolder and more full-bodied, so it holds its own better in recipes where matcha needs to stay noticeable against something stronger like the honey lemon sparkling version.
